Locust bean gum is used in particular in the preparation of ice creams.

In the ice cream sector, this food ingredient (E 410) is highly appreciated because it allows you to naturally increase the creaminess of ice creams and sorbets; locust beans contain pectin, an excellent gelling and thickening agent.

The use of locust bean gum also increases the workability of the product, maintaining a smooth body and delays the formation of ice crystals.

Different viscosities are available, both Conventional and Organic.
